In Dragon Age: The Veilguard, you have loads of ways to attack. Standard attacks, range attacks, abilities, companion abilities, and heavy attacks are all useful, but none are as powerful as Ultimate Abilities. After charging up your Rage, you're able to unleash a devastating attack that does a lot of damage and is great when used as crowd control.
However, it can get a bit tedious using the same Ultimate Ability you unlock at the start of the game for hours and hours. Thankfully, if you have enough skill points and look in the right place, you're able to unlock new ones to use instead.
Each class in Dragon Age: The Veilguard has three specialisations you can work towards by unlocking specific skills. Each of those specialisations has a new Ultimate Ability you can unlock.
If you head to the skills menu and look to the outside of the main circle, you'll see the three specialisations, each with its own group of skills. Each specialisation will have one new Ultimate Ability you can unlock, as the second skill in that part of the tree. To start, you will need to pick a specialisation to work towards, as you're simply not going to have enough skill points to unlock all of them.
Once you've chosen and spent a skill point on the Ultimate Ability you want, head to the Character tab in the menu and you'll find your equipped Ultimate Ability at the bottom of the screen. Click on it, and you'll be given the chance to equip the one you just unlocked. After you've done so, it'll then be active next time you get into a fight.
It's worth noting that the new Ultimate Abilities aren't necessarily better than the default option for your class. For example, if you're a Warrior, the initially unlocked Ultimate is the best of the four you can get. Here are the three specialization Ultimate Abilities you can unlock for each class.

You can only have one active at any one time, but you'll find that the default option is the best in most situations. You should only change what you have equipped if the elemental type of an Ultimate combines well with your companions in a specifc quest.
