To get more seeds, you'll need to make Small Hybrid Plants. By planting the seeds in a row of three, you'll create a Small Hybrid Plant; the type depends on the color and order of seeds used. Watering this plant will then cause it to grow seeds, the color depending on the type of plant.
You can also sometimes find Simple Plants already around the clearing, or sometimes in pots around the shop. Additionally, you can sometimes find seeds on the shelves or tables near the tea machine in the shop.
You may occasionally find seeds when sweeping piles of leaves or trimming weeds.
While not technically Simple Plants, you can also find Tea Leaves and Mushrooms around the clearing, as well as Coffee Beans starting in chapter four. All three of these plants are inexhaustible, meaning they'll instantly respawn elsewhere once you pick them, so you don't have to worry about running out.
Mushrooms come in four variations, but the concept is the same for each. They will typically grow in groups of several types of mushrooms, so you'll probably need to find a few different groups to get all the mushrooms you need for a drink.
Tea Leaves and Coffee Beans (once they're available) are much easier to get; just run around the edge of the clearing and you'll find them in no time. Coffee Beans are picked up straight into your inventory, while Tea Leaves need to be gathered using the basket, which you can grab from the workshop room in the shop.
