The capture experience works great on Windows 11 and is certainly better than Chrome OS. The former allows you to capture multiple windows, not just two. To be precise, you can capture up to four windows in a split view screen. Chrome OS has a lot of work to do here to match Windows 11's superior multitasking capabilities.
As of this writing, the feature is not available in any Chrome OS channels. However, the split view improvements are likely to be available to Canary channel users first. Once the company is confident in promoting to more people, users from other channels will have the opportunity to take advantage of it.
