5 Rather than direct sowing seeds initially, plant larger seedlings on a windowsill or purchase them from a nursery for rapid maturation, especially in colder climates. This method is useful for young vegetables such as beefsteak tomatoes and peppers, because they usually take a long time to ripen and must be ripened before frost, otherwise they will be delayed until winter.
